Top Level Domain Nightmares!

OK - we messed up.
We had to re-use an old IP. This IP used to be used for a review site (I can PM the url to anyone who wants to investigate).
We then set up a new website at this IP (again I can PM the url to anyone who wants to investigate).
Unfortunately we never removed the IP from the old DNS record... then accidentally linked to the old domain.
Next thing we know, 146 pages from our new site are in Google's index - all listed under the old domain! Only 38 are listed under the new domain - which is the same site on the same IP.
I have just removed the IP address from the old domain - so hopefully that will get rid of the bogus listings - only problem is, we failed to spot this for nearly a month (don't we sound like a bunch of pros..?).
What's the best way out of this mess - any takers?

If I do the 'redirection to another URL' as suggested by Ian, will this forward to the same page on the new site?
Eg. Oldsite/folder1/page2.asp -> Newsite/folder1/page2.asp
Also, is this definately classed as a 301 by SEs?

MMC level quick change or individual page redirects?

Technically neither should be an issue but I'd be a little (over) catious about the fact that page content is sent along with the status codes from the MMC redirect.
