I'm interested to know what the current - 2012 - theory is what search engines are indexing from the properties field of a PDF document?

The last time I read something that came from a credible source (I think it was Adobe) they suggested that only the Title was indexed by engines.

Any new thoughts?

Both Google and Bing presently show me search results based on the contents of PDF files, rather than their titles. However, I don't know how extensively they index the files.

My real question is "beyond the Title tag and using a descriptive URL" what else in the Properties field is worth filling in as far as Search Engines are concerned?

Just so it's clear that I'm not ignoring your follow up, I have no experience with trying to optimize any properties fields in PDF files.
