I am assuming you are considering a sales conversion rate. In this case 1% is in fact realistic. Although by no means a good rule of thumb. Your actual conversion rate will be influenced by many factors, including the quality of the copy, product type and category, current external factors, etc.

Costs of the products versus competitors is important as are shipping costs. Shipping costs are a common reason for shopping cart abandonment

When I plan sites & am trying to determine what it will take to work (be profitable), I build 3 models - .5%, 1% & 1.5%. It gives me a good range to start with, and if conversion comes in higher it's a bonus.
