I am just starting to go ahead and use self hosted blogs within the actual domain.

Question would I need to go into Webmaster tools and submit a new post sitemap?

Or would I get the same result just by cross publishing the link on Google Plus?

Either way may or may not help Google discover the  new URLs faster.

As long as you've got prominent links to the blog from the rest of the site, that's really all you need to do. Of course if you had an old blog on a different domain, 301-redirecting it to the new URLs would be highly beneficial.

Good point, perhaps putting another link on the home page to that Blog, its already in the menu but was never linked before to any content just to get it recognized.

If it is in the menu (in a crawlable fashion) then you should be fine.

I notice that my posts are just site/title

And on another site I have they are site/date/title

Should I make them site/blog/name?

Does the category matter?

Are you talking about the URL (permalink)? Or the title tag? If you're talking about the URL, it doesn't really matter. If you're talking about the title tag (what appears up in the title bar on the browser) my personal preference is to have the blog post title first, with the blog name at the end. (Any other stuff you want can appear in between.)

Permalinks

The blog is self hosted on company's site. It's just a category at this point.

OK, in that case, it really doesn't matter. Set them up however you like, with one caveat: if the blog itself is divided into sub-categories, and there's a possibility that a post might ever be classified in more than one category within the blog, it's probably best to NOT include the category in the URL. Otherwise, you could end up with the identical page having two different URLs, which is pretty much the definition of duplicate content. Of course you could probably fix that with canonical tags, but why not simply avoid the problem in the first place? :)
