When setting up non-www to www redirects in cpanel is it better to choose the "Wild Card Redirct" ? Or just the "Redirect with or without www" ?

I would do a wildcard redirect. That will also help to catch typos in your subdomain, for example:
ww.yourdomain.com
wwww.yourdomain.com
