I've gone a bit overboard and registered about 20 domains (for 1 year). Most are of the form *portfolio* dot com. I bought several primarily because I want to trademark one of them (est. cost $350).

In the mean time, I believe I can "self-host" ALL of them on a Linux/Apache configuration on a virtual machine in the cloud for about $50/mo total. Is it worth the time and effort to create a basic, and unique single-page for 19 of them, and include a link to my "main", trademarked domain?

It all depends on what your doing. However, 19 backlinks isn't going to get you very far these days

I'm kind of in the same boad, I have about a dozen domains purchased this year and I have no idea what to do with them all. haha (I just couldn't resist, so many $1.99 offers going around and I just kept coming up with killer domain names)

I've banned myself from getting any more... at least until I either put some decent content up on all my sites or I sell a few of them.

Good luck! However, I'd rather have too many good domains, than not enough.

I've read in a few different places that given 2 sites competing with having similar titles, same/similar keywords trying to rank for, that the one with more backlinks will show ahead or above the other site.

Any truth to that?

Not necessarily the one with MORE links, but the links will certainly contribute to be a deciding factor.

Yeah, not necessarily more links, but the one with BETTER links may have some advantage.
