I was wondering if having more products helps page rank in google or if having more pages on your website helps?

Only if there's a reason to have the products and pages. (other than search engines).

If by page rank your talking about Google's PageRank ™ algorithm, then having extra pages will have no influence. That PageRank is purely based on who links to who.

If your talking more about where you will show up in search results, it may help. The more original content you have, the more information Google has to determine if you have a page that is relevant to a particular search.

I suppose you could argue that the more pages you have, the more interesting your site is likely to be, and therefore the more people will discuss it, link to it, etc. But I wouldn't base my entire business model on that assumption.
