how long does it usually take for google to crawl and index an "entire" site please? I am being told different times, some are saying a couple of weeks, some are saying 30-45 days, Also, some are saying google indexes one page at a time so if you have a 20 page site how long will it take before your site shows up on google?

Anywhere from 1 day to never. It depends on your site structure and it's popularity.

So when potential clients approach you and ask the same question, is that a good answer to give them? I would think they would be turned away not having an estimated time when they can expect to see their site on Google?

Without looking at their site, yes. Every site is different.

Then it would be a bit of hard luck they are having.Search engines work to their schedule NOT yours, and it takes as long as it takes, not a minute more and not a minute less.
And if clients do not understand that, it is your job to educate them. After all they have hired YOU to do what they cannot.

There is a simple formula for Google spidering and indexing timescales.
T = d x G
where G = 'Googles variable constant'
T = d x G
where G = 'Googles variable constant'
