i would like to know if there is a software or a system what allow me to check before optimization and after optimization in order to know in which way SEO has been performed and what KPIs are really important and how to monitor them.

Yes, Google Analytics, or any good web analytics program can do this.
You compare the targeted search engine traffic for the months before you did SEO to it after you did SEO.
The idea is to increase the targeted search engine traffic. If that's not what you see happening, you may need to go back to the drawing board.
