I'm just wondering, if I do a search for a keyword I'm potentially going to target and discover that a site like ezinearticles.com holds the top or 2nd or 3rd position (a particular article on that site), is this something that's very difficult to beat?

So would you recommend detouring from using this particular keyword then? Is there any way to gauge whether to go after it?

That site has always seemed more like a place trying to put Ads by Google in as many spots on a page as possible than a relevant source of information or products.
Don't worry about how they place or if you are above them in them rankings, people will recognize most of the stuff they produce is junk articles without any real value anyway.
Read the articles that are showing up in the spots you mentioned and see if they are actually competition for you. Chances are, most visitors will look past those for something more relevant.
You should never detour away from a keyword or phrase you would like to focus on simply because someone else is ranking well for it.
SEO is meant to be challenging, that is part of what makes it such an interesting profession!
