The keywords they're actively optimizing for (if they're actively optimizing at all) are going to be in titles, internal link anchor text, maybe headings and bold text. Reading out the content of the page, you should certainly get an idea of the concept the page is about, even if they're not making an effort to optimize for particular keywords. If not, the content probably isn't very clearly written.
