I'm sure this has been asked before and I did look around but can't seem to fully understand how updates work. I know that it's not a good idea to have my eyes pinned on my ranking took (Digital Point) to see if there has been any movement but I have several new clients and I'd like to be able to reassure them that the changes I made have had some effect.
I read some articles online and it seems that Google updates constantly now? Is this somehow different than the dates we assign like the "November 16th update" or the "Valentine's Day Update?" Is there still a "Google Dance?"
Also, I have read other SEO sites that have testimonials like "so and so SEO managed to take our site from 285 to 2 in just 10 days!" How is this possible in natural SERPS?

It's a combination, really. There is now, again, a (somewhat) monthly upate. But, there are still lots of rolling update things going on, plus constant algo tweaking.
