Iím looking at using the new canonical tag to eliminate duplicate content created by our dynamic urls. My question lies with whether or not I should use the canonical tag or the 301 redirects for our home page. Would love some insight.

The Canonical Link Element is not a fix, but something you can use if/when you can't fix something correctly.

So if a 301-redirect will fix whatever duplicate URL problem you're having you should definitely do that.
