If I have a domain name that has never had its own website, it's always been a 301 redirect to another site, and somebody links to that URL, will Google see it as a link to the site to which the URL is redirecting or will it not be seen with as much importance as a link directly to the main URL?

The link will be counted towards the final destination url since it's a 301.

Nobody can say with any certainty if 100% passes through or not since we don't have access to the algorithm details, but it seems to all pass through.

Cool, thanks. What about 302 redirects? Apparently all my redirects are currently 302 but we are in the process of changing them.

302 redirects are 'temporary' and so do not pass PR juice to the destination URL.
