Does anyone know if it's possible to take a PDF and convert it down to a .jpg? And, if so, what software would you use?

Yes you can create it for that you need to install Universal Document Converter software onto your computer.

Out of curiosity, why would you want to do that?

I ask because PDF's can be spiderable content, whereas JPG's are not. I can only imagine converting to jpg to be useful if you were creating thumbnails, or something.

Opening a pdf in photoshop would also work.

And of course if you have the full version of Acrobat it'll allow you to save it in multiple formats, including jpg.

Are you trying to extract an image which is merged in the pdf file? If yes, you may try a pdf-to-doc converter.
