I'm sure it used to be good advice to make sure that UK sites were hosted on UK-based servers for SEO purposes, eg being found on Google UK.
Did I make that up? Is it still the case and how important is it?

The the domain is a co.uk it's not all that important anymore. The domain's ccTLD trumps the server location.
However if you're trying to get a .com to rank for local UK searches having a UK based server that actually gives an IP that tracks back to the UK (many don't, so check to make sure before you get in too deep) is pretty much going to be a requirement.
Google will allow you to set a location via their Webmaster Tools console, even for a .com hosted in the US or elsewhere, however that only covers Google and may be subject to issues.
