I read somewhere that it is not a good idea to submit to DMOZ more than once unless you are doing an update but does this mean you cannot submit to more than one category?

Typically, DMOZ will only list your site in 1 category.
Sometimes you can get a regional listing and a category listing. If your site covers a lot of information, you might be able to get an interior page listed, but it's up to the discretion of the editor.

I'd recommend waiting until your original submission is accepted, then going to the Resource Zone and asking the editors if it would be worthwhile to submit to specific additional categories, briefly but clearly explaining why you think the site should have multiple listings.
I think multiple entries in DMOZ are the exception rather than the rule.

I was just curious because one of our competitors is listed twice, using different descriptions for each. I was not certain if this would help or not.

It certainly helps, but it's hard to get. I've watched threads in the resource zone in which one site owner argued that they deserved a second listing because such-and-such competitor had one. The editor's reply was to the effect of "You're right. I'm taking out their second listing."

I think some of the DMOZ editors are on a power trip. If you can not get listed there do not forget about the other directories on the web.
If you think you have a stand alone resource that is great to try and submit it too. On the same token, if you think it is really great you should consider giving it a domain of its own. If you home page never gets listed after a considerable amount of time you may want to try and submit a different web page in a different category.
Arguing never works though, and having one page listed is more than most sites do! so be
