I am changing my host so the IP address will change, I have seen in this forum that it is not an issue.
But I want to know what will be the benefit to have a dedicated IP address for my site than using the shared one which is normally given by the shared hosts?

If you're going to run e-commerce transactions through your site and need an SSL cert to do so, you'll need your own dedicated ip number. But for the search engines it doesn't matter if you're on a dedicated or shared ip for the most part.
