Ive had a domain for about 2 years now and finally put up a page that said.. coming soon, got my meta tags set-up.. and a little content with some keywords integrated into the content. Ive been told that google doesnt like "new" pages and domains that are only registered for small amounts of time. Will getting this page with a little content help my page in the future when i look to reach the top of the organic searches?

No.
Not until it's a real site that has real links pointing at it.

"Coming Soon" and "Under Construction" notices have always been bad ideas for undeveloped Web sites. It would be better to block all robots through your robots.txt file and put up a blank page to keep people from poking around (not that there should be anything for them to poke around in).
When you're ready to put up usable content, do it, then unblock the spiders and ping Ask, Google, and Yahoo! with an XML Sitemap. You should be okay but you'll need some patience and a marketing plan.
