Also, do external links from blogs count towards the external link factor that spiders seem to like so much?

Is the whole site one linear process? one straight line string of pages?
That may work for your primary action, but at the very least, include a detailed site map and consider creating a new area of your site that is a bit more organic...more loosely connected. Post articles or whatever makes sense in the context of the site and include keyword rich links to other articles and the first page in that linear process you are talking about.

If you want visitors to only start at a specifc page and follow a specific path, then you most definitely wouldn't want the search engines to pick up any of those other pages at all. In fact, you'd want to actively exclude the spiders from indexing those pages. Otherwise you could run a very real potential of people starting out up in the middle of your sales cycle by clicking on a SERP result.
Not that I agree with the general premise of forcing every person through a dedicated, several page sales funnel mind you (there are all sorts of reasons for not doing this) but if you absolutely have to have everybody go through a specific path you need to exclude those other pages from ever getting indexed.
As to the other question, all links from external sites have the potential to be counted as links towards your site. If they do or not depends upon how the links are coded on the other site, if those other pages get spidered, etc.
