One thing I like about CSS over tables is that you have more control over how a bot reads your content.

For example, in the typical nested table site you will often have your content showing up waaaaay down at the bottom of the page on a view source, and your top bar, side bar, other side bar, banner ads, script code, and kitchen sink all showing up above it.

Remember that most SE's assume that you get to the point of what the page is about near the beginning, not the end, so there is often a wieghted rank on the keywords and links at the top of a page.

By using CSS, you almost always end up with your content up near the top of the page (view source). Also, external CSS makes the page load faster and it's cleaner.

In short, I'm a convert :aloha: I can also point you to many people with stories on how their rankings went up after switching to CSS, but none who said it went down. Unfortunately, it's not very scientific since usually when you are making all these changes you take the opportunity to fix your site up a bit too, so it's hard to show an apples to apples comparision.

Do this - change one page on your to CSS and see if you like it. It's worth the effort, and you may find some pleasant benifits. At the very least, it will help prepare you to deal with clients who use CSS.
