When I create a new subdomain for a domain, does its age count? How is it seen by the search engines?

BTW how would anyone (other than you) know when it was created?
It will be seen as a seperate site.

Yes age counts. When you create a subdomain it like a whole new entity in and of itself. Links from the subdoma to the main site are considered outside links, The age of your primary site does NOT transfer to the subdomain.
I'd only sagest this if your keyords are not related to one another, if the are keep them on the same site, as far as the search engines are concerned size also matters.

And you know this how?
In the past, subdomains did indeed skirt Google's aging delay. I'm not sure what's happening with them lately, however.
