I have been experimenting with dynamic content generation

Though in hindsight I think this is too spam like.

How unique does a pages content need to be, for it not to fall foul of Big G?

If all these pages are orphan pages meaning that they are not accessible from your main site then they are nothing more than doorway pages and yes they would be considered spam. Your hindsight is correct.

Don't do it. Anyway, doorway pages are not effective anymore with link popularity being a crucial factor these days. Rather work at optimizing your site's sub pages for different key phrase. That is the best way to go.
