I have another site that has 80% of the pages in the Google Index, so the Adsense ads that display are related to the content on the page.
However I have 20% of the pages that do not seem to be in the index yet, because the Adsense ads show untargeted ads. Will Google spider those other pages now that Adsense is on the page or do I have to do something more to get them in the index?

The adsense spider and Googlebot are entirely different. You can have a page in in Google that hasn't been spidered by Adsense yet, and vice versa.
The Adsense spider (identified in your logs as Media Partners) visits higher traffic pages first... to get them updated, view your pages a few times. That call to the Adsense code should trigger it. If you see the Adsense spider HAS visited and you still have public service announcements, you may need to take another look at the content on your page.
To find out how many of your pages are indexed in Google, use this query:
allinurl: pilotjourney site:www.pilotjourney.com
That shows 6650 pages indexed in Google.

Oh, that is good then.
Because UI just added the code and that just means the spider has not been there. So the adsense spider works the same way, just looks gets all around my looking at links then?
I do not even see any spiders that say media partners on pilot journey..so how do they know the content of the pages?
