Where can I learn more about overcoming these challenges? I didn't find any previous threads that addressed this -- maybe I didn't look hard enough or long enough?
has anyone had success with sites like this?

I'd probably present an outline of the limitations you've identified in their current site so they understand what they're missing. Once they have that, they can work with their current store/host to find out if they're willing to change. If not, it's time to move.
Creating static pages isn't a requirement. Creating an indexable site with content served in an appropriate manner is.

Let the client know of all of the problems you've identified and let them make a decision. IMO, it's silly for any e-commerce site tie their own hands behind their backs and to put up with store vendors who have no concept of search engine visibility these days. There are so many reasonably priced options available that it's worse than flushing money down the drain.

In my case, I made a chart of the issues...explained the cost of trying to work around the obstacles (if it could be done at all)
and then charted an easier solution for the long term even though the inital outlay was more...
any business that's in it for the long term is going to do what's better for them in the long term most of the time.
