I'm gunshy because I had a site not indexed because of variables and as soon as we changed the URL structure, they were indexed fine. That was 2 years ago though.
I'd still be nervous!

It's been a few weeks since I've looked at it, but Google seemed to be grabbing up to 6 parameters and MSN up to 5 parameters. Yahoo! however still seemed to be maxing out at 3 parameters, and not all of the 3's were making it into their database.
Therefore, I'm still sticking with 2 parameters max myself if I want to make sure a particular page gets spidered and indexed.

It's interesting to hear you say that. Is that simply because otherwise you would have duplicate content at more than one url?
We used a kind of mod-rewrite on our sitemap page, but it was too difficult to implement throughout the rest of the site. Do you think this did more harm than good?
I've removed the mod re-write this morning after reading this thread.

Pretty much, but also the reverse of that.
You don't want:
To point to a page that could have different wildly different content the next time you go there, because then the spiders will get confused about what keywords to rank your page for.
